My name’s Jasmine and I’m the creator, recipe developer, food photographer and blog author here at Easy Low Carb Life.
My family and I wandered into the low carb lifestyle world a few years ago when my husband was trying to control his symptoms of an autoimmune condition.
We started eating low carb and noticed that we not only felt better, but we also shed excess weight and bloating.
And to this day, we feel at our best when eating this way.
But….we found it a struggle, at first, to fit all the complicated food preparation and cooking into our busy lives. I remember one weekend, we literally lived in the kitchen with all the food prep, cooking, etc. we had to do.
You can bet, our kids were NOT happy with that, and neither were we!
From that weekend onwards, I made it a goal to not only find and make easy & fast low carb/keto meals– so that this could be a lifestyle we could maintain. But also make recipes that could nourish my family with nutritious food at the same time.
You see, I believe that low carb/Keto is NOT just about all-the-bacon and sausages…
I make it a point to add (a.k.a sneak in) healthy, nutritious low carb veggies into most of my meals so that everything stays balanced.
I’m a huge believer in the power of veggies and fiber.
And you wouldn’t believe how keto-friendly many vegetables can be- and how delicious they are when prepared right!
